Here are some of the foods I’ve enjoyed lately:
Cinnamon Raisin Toast
On the days I don't have my smoothie for breakfast I usually go for this because who doesn't love a good slice of cinnamon toast? So this isn't actually cinnamon raisin toast it's our regular white bread recipe with cinnamon sprinkled on top and a smear of coconut oil, plus raisins on the side. SO good!
Baked Potatoes and Kale
This is such a nice and light but filling meal. It’s super easy to make, just bake as many potatoes as you want to eat then 10-15 minutes before they’re done prepare the salad-ish part. Chop up a few leaves of kale, some onion, throw it in a bowl and add a little olive oil, salt, and pepper and toss. If you want to get a little crazy add some cayenne pepper. A little tip: add the olive oil and spices in first and mix that around then add the onion and mix and then add the kale and mix so everything is evenly coated and you don't end up with clumps of spices on the kale.
Tomatoes on Garlic Toast
I love this, it’s so good. When tomatoes come in season we’ll make more of this which is, as it says, is just sliced tomatoes over garlic powder and a touch of olive oil on sourdough toast. It’s like quick garlic bread with added goodness.
The title says it all but the particular veggies used were parsnips, carrots, potatoes, and asparagus. If you haven’t had parsnips before they’re basically like a sweeter carrot. Like in the picture I throw everything (half at a time if you make a lot) in a bowl and season with salt, pepper, onion powder, garlic (fresh or powdered), parsley, and olive oil. Toss and throw in a pan then bake until tender. We’ll have this as dinner and just serve a big plate of it. So good!
Epic Sauerkraut Sandwich
Okay so this one is more likely an acquired taste lol - but if you like it you’ll love it! It’s toasted sourdough with sauerkraut, onion, pickles, spinach, mustard, and again a touch of olive oil.
