Have you made granola before? I haven’t until recently but now I’m totally hooked! It was featured in last week’s post and today I’m excited to share this super easy to make, super tasty, and of course, super crunchy Vegan Crunchy Banana Granola! It’s oil-free, gluten-free and totally amazing!
I’ve always loved cereal with crunchy clusters in it but for some reason, I never thought to make my own batch of a crunchy granola cereal before. Boy oh boy it’s a game changer! If you like crunch you’re gonna love granola! I have it on its own as a cereal with (chocolate) cashew milk, it’s delicious! All of the flavors really go nicely together. The oats, the banana, the coconut, (the chocolate cashew milk) it’s all wonderful!
The other thing I love about granola is how it really fills you up. I can have a bowl and feel satisfied for quite a few hours, so that’s nice! Also as I mentioned above, it’s really easy to make! Now when I want granola I just preheat the oven and by the time the oven is fully heated up, it’s ready to bake. Then I’ll go do something for 15 minutes and for the last 5 minutes I’ll hang around to watch it cook until it’s browned enough. Alright you guys! Onto the video!

Vegan Crunchy Banana Granola
- 1 Small Banana, Mashed
- 3 Tbsp Maple Syrup
- 1 Tsp Vanilla Extract
- ¼-½ Cup Coconut
- ¼ Cup Seeds (I use sunflower seeds)
- 3 Cups Old Fashioned Oats
OVEN:
Preheat oven to 350F, 177C
DIRECTIONS:
Fully mash the banana in a large bowl. Add the maple syrup and vanilla extract then stir well. Next add the coconut and seeds, mixing well again. Now add the old fashioned oats and mix it up so that everything is evenly coated. Spread your granola onto a parchment paper lined or bare cookie sheet. I find it doesn't really stick to my pans but you might want to play it safe with some parchment paper or tin foil.
BAKING:
Bake for about 20 minutes or until golden brown. Some of the not-as-golden-brown pieces of granola might still feel soft right out of the oven but will become hard after 10 or so minutes.
I have made this stuff so many times now! I love it straight out of the oven and into my bowl with cold cashew milk. The pieces are nice and warm and the milk is cold so it’s a great combination.
Feel free to add nuts, other seeds, dried fruit, fresh fruit, dry cereal--whatever you’d like! Another great way to eat it, aside from as cereal, is on top of a smoothie bowl or eating it dry as a crunchy snack, maybe with some fruit.
