Hey everyone!! Long time no see! Today I’ve got a very tasty recipe to share with you guys! Vegan Gluten-free Banana Bread Muffins! In two flavors, Blueberry Banana Bread Muffins, and Chocolate Chip Banana Bread Muffins--if you’d like you can mix the two for even more exciting muffins!
These muffins are super moist and such a great snack, like something you can bring with your lunch as a more healthy dessert option. I love the way the banana, oats, and add-ins really complement each other and I think you will too! I’ve actually used this recipe as a vegan banana bread cake before. I added in chocolate chips and coconut flakes with more coconut flakes sprinkled (heavily lol) on top! Soooo good! You might want to try that too!

Vegan Gluten-free Banana Bread Muffins
Adapted from Ambitious Kitchen
- 2 ¼ Cups Oat Flour
- ½ Tsp Baking Powder
- ½ Tsp Baking Soda
- ¼ Tsp Salt
- 3 Ripe Spotty Bananas
- ½ Cup White Sugar
- 2 Tsp Vanilla
- ¼ Cups Applesauce (or a vegetable oil)
- Up to ¼ Cup Water
- 1-1 ½ Cup Chocolate Chips, or Blueberries, etc
Preheat oven to 350F, 177C
You can use store bought oat flour or make your own, If you’d like to make your own simply pour whole oats into a blender or food processor and blend until you have a flour-like consistency.
Add all of the above ingredients to a large bowl and mix well.
Bake for about 15 minutes in cupcake pans. If you’d like to use muffin pans or another kind of pan simply bake until an inserted toothpick comes out without any wet batter on it, or until the toothpick come out clean; a few crumbs are fine.
I love these muffins! I can’t decide which flavor I like more! Feel free to add other things like nuts, other fruit (lemon, more bananas chopped up, cherries, raisins, etc), coconut flakes or seeds!
